Rice kheer (pudding) is a popular classic Indian dessert.

Rice Kheer (Pudding)

Rice kheer is very delicious dessert. On any special or auspicious occasions, Kheer remains one of its main places. It does not take much time to make it and all the ingredients to make it are easily available at home. Everyone likes rice kheer.


Small basmati rice 1/2 cup
Full cream milk - 1kg
Pure ghee-1 tbsp (optional)
Cashews - 1 tbsp (chopped)
Raisins - a tbsp
Cardamom(Choti ilaichi) - 4-5 (Peel and crushed)
Sugar- 100 gm or half cup
Almond 10-12 (crushed into small pieces)
Pistachios 8-12 (cut into small pieces)


Take a vessel, heavy base and pour the milk in it. Then keep it on gas for boiling.

Wash the rice just before cooking and keep aside. Take a pan & heat it by adding Ghee & roasted the rice for 5-7 mins on low flame.

When the milk starts boiling, add the roasted rice in milk, lower the flame and allow the rice to cook in the milk.

Check it with a ladle and continuously move the ladle for equal distribution of heat and by doing this, rice & milk will not burn.

Cook in this pattern till a creamy consistency is obtained and the rice is properly cooked.

Add sugar chopped cashew nut Almond Raisin in it & cook for 2-3 minutes.
Turn off the flame and add cardamom powder to the mixture & mix well with the lader.

Your delicious kheer is ready.

Transfer the kheer into a serving bowl and allow to cool down to normal temperature. After that garnish the kheer with almonds & pistachios.
Keep the kheer in the refrigerator to cool down further and serve it. Cold kheer is also very tasty.


Roasted rice in ghee or soaked in water, both are used in making kheer and both of them are delicious.

While cooking the kheer, keep the gas flame slower, as the kheer made on a low flame is very tasty.

Rice kheer takes approximately 1hr in cooking.
